What are the differences between Belgian Waffle vs. Regular Waffle?
The pockets, basically. Belgian Waffles are made in a waffle iron, which has a deeper grid pattern. This way the Belgian Waffle can hold gooier, stickier syrup and melting ice cream. Regular, American-style waffles have shallower square pockets.
Another vital difference between Belgian and Regular Waffles is that Belgian batter is made differently, which gives it that end-result crispier finish. Let us explore the batter recipes that make these two waffle styles different.
Belgian Waffle Classic Recipe
- 2 cups cake flour
- 2 Teaspoons baking powder
- ½ Teaspoons salt
- 4 large eggs, separated
- 2 Tablespoons sugar
- ½ Teaspoon vanilla extract
- 4 Tablespoons unsalted butter, melted
- 2 cups milk
- Non-stick cooking spray
- Preheat waffle iron – use deep seated waffle type
- Take a large bowl and mix together sifted flour, baking powder and salt
- Take a second bowl beat together egg yolks and sugar
- Beat till sugar dissolved and egg is pale yellow in color
- Add vanilla extract, melted butter and milk – whisk
- Mix egg and flour mix together but don’t over-mix
- Take a third bowl and whisk up egg whites – preferably with an electric beater – till egg whites form peaks
- Using a spatula gently fold the egg whites into the other mixture – again do not over-mix
- Spray non-stick spray over waffle iron grid
- Spoon waffle mix onto waffle grid, enough to just to the top
- Cook till brown and extra crispy (remember the pockets are deeper and will need a little extra cooking than a regular waffle iron)
- Serve immediately
- Toppings can range from syrup, ice cream, spices, cheese, berries and even chopped bananas
Regular or American-Style Classic Recipe

- 2 Cups all-purpose flour
- 1 Teaspoon salt
- 4 Teaspoons baking powder
- 2 Tablespoons white sugar
- 2 eggs
- 1 ½ cups warm milk
- ? cup butter, melted
- 1 Teaspoon vanilla extract
- Take a large bowl, mix flour, salt, baking powder and sugar together
- Set to one side
- Preheat waffle iron
- Take another smaller bowl and beat eggs together
- Pour milk, butter and vanilla extract into egg mix
- Pour milk mixture into the flour mixture
- Beat till mixed well
- Pour a little of mixture into the waffle iron
- Cook till brown and crisp
- Serve with either syrup or ice cream or both
- Additional toppings like strawberries, blackberries, cinnamon and sugar are also good
While there are subtle differences in the ingredients and method of mixing them, these differences produce a particular waffle result. Both are delicious but the Belgian waffle is a little bit thicker, a little bit more filling and a little bit richer. Choose your fave and enjoy!
